Matcha is a finely ground powder produced from green tea leaves. It exhibits a bright, emerald green hue and a full-bodied, vegetal flavor. The tea plants that yield matcha are shaded prior to harvest, resulting in a dark green leaf rich in chlorophyll, caffeine and l-theanine. The leaves, once harvested, are immediately steamed to stop oxidation. They are subsequently stone-ground into a delicate powder ready for sale.
Culinary grade matcha is a grade slightly inferior to ceremonial grade matcha. It's typically more affordable and is intended for incorporation into lattes, smoothies, baked treats, and various recipes. Culinary grade matcha generally possesses a robust, less complex flavor to complement other ingredients.
